Purchased at Echigo Yuzawa Station Ponshu-kan. This is the sake I liked the most after tasting it. It has a strong aroma and flavor, but is mild. Slightly acidic. The rice that has been stored in the snow chamber makes it mellower!

I bought it with the sales pitch that it would be produced in a limited edition of 800 bottles.
It is an unfiltered unpasteurized sake, but it does not have much punch or sparkle.

I visited the brewery on my recent vacation and bought some 💰.
It's my new favorite place for a cheap and relaxing sake tasting with a wide variety of sake 😊.
Among them, Kayama is the one that made me discover DHC Brewery personally, so I have a special attachment to it.
I immediately opened the bottle 🍶 and it tasted great😊.
The taste is fruity and acidic, which is a bit unusual for Niigata sake, easy to drink and gentle.

The nose is not gorgeous, but has a faintly fruity ginjo aroma.
It is juicy on the palate, with a firm sweetness that is very spreadable, and a brown sugar-like richness in the umami that I like the best 😆.
The fruity aroma that comes out from the nose when swallowing, and the sweetness and acidity with a clear outline remain in the mouth until the end, and since the alcohol content is high, you can feel a little bit of alcohol at the end.
As the temperature rises, the assertion of umami becomes stronger and richer ❗
I still like this flavor 😋.
I heard that Kayama also has Kameguchi direct pickings, so I'll check that out too 😁.
