It's going to be a vegetable-centered menu with cucumbers, tomatoes, snap peas, and ... for the summer as it gets hotter. Dinner with sake from the countryside. It is a refreshing and royal sake of Echigo, light and dry, and fits for dinner. The brewery is located next to Niigata Prefectural Ojiya High School, where I went to school, and the main brand is Chojazakari.

This Sake is slightly dry with an earthy aroma. There are flavors of mushroom and wood. Sweetness and acidity are present towards the end. The flavor profile is different from other Niigata Sake I have tried. Guess I need to drink more Sake. 😁

This Sake is light and dry. It has a mellow, smooth mouth feel. There are flavors of wood with a hint of apple. The finish is dry and clean. I like the dryness of the Sake because it is not too strong or overpowering. This Sake pairs well with salty foods.

I have only seen Koshino-Kanchubai here, I was a little puzzled by the name, which sounded like something I had seen somewhere before, However, it is surprisingly not bad as a food sake.
