100% Yamadanishiki
Kake rice 55%, Koji rice 50% polished rice
Alcohol 16%.
Nice aroma, fresh and crisp, muscat or pear? Pear? It is fruity. ❣️
It has a good balance of sweetness and acidity!
On the second day, sweetness↑ juicy and more preferable than freshly opened💕.
On the 3rd and 4th day, it gradually calmed down, but it was still delicious to drink with good balance!
I haven't drunk a lot of it, but so far it's a great taste!
I haven't tasted the fire-ground yet, so I'll try that next time 😊.

YOKOYAMA SILVER Junmai Ginjo (Hiyoroshi)
New sake is already available today. I bought hiyaoroshi! I thought, "This is new sake! Isn't that kind of a short period of time?
Well, here is Yokoyama's hiyaoroshi.
It is served cold.
There was a short gas sound when the bottle was opened.
When poured into a glass, very fine bubbles rise to the surface and adhere to the glass.
The top aroma is mild and slightly sweet.
The color is clear with a faint yellow tinge.
The mouthfeel is slightly gaseous and slightly thickened.
The taste is full with a rich umami flavor that spreads to the palate. There is a mild sweetness, but in the middle, there is a sharp pungency that stimulates the tongue.
The aftertaste is sweet and spicy. There is a slight bit of bitterness at the end. There is not much sense of maturity.
