Today I stopped by a liquor store for a purpose and found a small bottle of Yokoyama-san's 😄! I had been wanting to try it, so I bought it immediately! It was my first time to buy from Yokoyama, and I was very excited.
Well, the aroma is fruity and mainly muscat. The aroma is typical of junmai ginjo! The aroma is not as sweet as one might expect. The bitterness and umami come from there, but the aftertaste is clean and not harsh! Easy to drink! It can be drunk before or after a meal. It is delicious!
This is a new sake from Yokoyama🍶.
They used No.18 yeast and No.14 yeast for this sake.
The aroma on the nose is fruity and sweet.
When you put it in your mouth, it has a juicy sweetness and a good acidity.
It finishes with a slight astringency.
It has a high degree of perfection, just like the latest trend.

Rice Polishing Ratio : Kake Rice 55%, Koji Rice 50%.
Alcohol Content : 16% abv
Slightly fruity aroma and

A revived brewery that I wanted to drink, Yokoyama from Ikijima.
Ikijima's groundwater and Akaban Omachi are the best match, well balanced, and very fresh sake.
It reminds me of the sake of Toyo Bijin where I was trained.
