Light. I like it, just like water. Elegant aroma of white flowers in the back, alky, lingering alcohol zing, light sweetness and umami. A perfect food sake.

Today's sake is Akita local sake, "Tobirazumi" special junmai sake from Tobirazumi Honpo, lightly filled with the usual additives: ☺️
It is said to have a "full flavor, pleasant acidity, and a strong backbone that keeps the taste fresh." It has a slight sourness and sake-like taste that lingers in the mouth, but it would be good with sashimi. ☺️
