It was made in April 2023 and has a slightly aged aroma. The acidity is also quite strong. Strong on its own, my favorite.

Hiraizumi熟成 山廃純米酒

Yamahai junmai aged in oak barrels for one year. It has a slightly mellow old sake-like flavor.
However, the drinkability of Hiraizumi is maintained, and the peculiarities are not that strong. I felt it was a good entry point for old sake.
