They use Shinshu raw Yamae-Nishiki and Nagano R yeast (high malic acid producing yeast).

Kutsukake Shuzo is the brewery that produces Fukumuso. For some reason, it did not come up in my search for sakekawa. The sales floor is new and clean.
The sake is sold at the brewery's direct sales outlets, which are limited to exclusive distributors only. The sake is sold only at special dealers, so it is not sold at the brewery's direct sales stores.
Therefore, we bought it at the nearest Igeta Miso brewery, Hara Shoten.
In addition to local sake, they also sell a delicious amazake. The amazake is really delicious.
