This is Mutual from Kutsugake Sake Brewery, whose brewery is not even registered in Sake-no-wa.
The secret course (black label) is very dry and has a very acidic taste that I don't like 💦, so I used a Nosaku sake cup to mellow it out. It goes well with chilled tofu with lots of condiments.
Hitomi is made from Hitogochiki and Miyamanishiki.

Both are pretty dry and honestly not my favorite 😅 if anything the gold course is easier to drink and runs out quicker!

The moment I thought that the robust umami was a bit heavy, the cool aroma and sweetness spread quickly.

I bought this sake in a drinking set.
They use Shinshu raw Yamae-Nishiki and Nagano R yeast (high malic acid producing yeast).
It has sweetness and sourness. To be honest, I didn't like it.
The attack of sweetness and acidity immediately identifies it as apple. After a while, a soft floral nectar also appeared.
Immediately after opening the bottle, I thought that each of the wines had too much assertiveness, but after about a round or so, they began to blend together in a well-balanced manner, and I was able to enjoy a pleasantly long finish.
I went to Nagano City to run in the Nagano Marathon.
The marathon was a disaster, but I drank a lot of sake and bought three bottles on the way home. It was like I went to buy sake. 😀
