Suppose to be a private label. Made from 100% Aomori Hanaomoi Mild flavour, with fruity caramel, which then becomes sharper, and mellows to taste of rice and some sourness. The rice and sourness is more pronounced as it warms up. Again tried it over 10 days, and found the flavour best from day 2 to 6, then a lot of flavour was lost after.

60% polished, hence the 60. Green apple and berry then acidity cuts in. With the creamy mushroom pasta, there was a hint of pineapple as well. I liked it as it cut through the richness of the pasta, but my wife preferred the Biden Kojo. Perhaps it’s the age, but I felt it was not as lively as I remembered it to be.

This was a nihonshu suggested by one of the staff. Mild start, with some fruity then mild sharpness and lingering caramel taste. Worked well with caramel dessert as accentuated caramel but cut through the richness

Popped when opened with fizzy mouthfeel. Spicy start which becomes fruity with green apple and caramel. Looks slightly cloudy, but I don’t think it’s a muroka? Day 3: still pop and fizz. To as spicy as before, with initial fruity and green apple, then umami, mushrooms and long lasting caramel. Wonderful when eating duck cassoulet instead of white wine. Delicious nihonshu from Sado.

There was a fizz when first opened. Smells fruity with an apple taste then sharpness with long lingering flavour on the first day. Day 3 it was more alive, with fizz on opening (supposed to be pasteurised), still apple with musk melon before a dry finish. Enhanced the taste of homemade mixed mushrooms fettuccini with truffles (it’s truffle season here). Day 10 it was past its prime; less fruity with a less balanced sharpness.

Yes it was delicious and good price performance. But must drink less than a week after opening.

It’s Winter here, so though I would have a fresh Winter nihonshu. Previously had it with sushi. Day 1: fruity apple flavour, with slight dryness. Had it with ham and pea soup, where the dryness was accentuated. Very good palate cleanser. Day 3: the flavour had deepened more fruity umami, little dryness by itself. Had miso-ginger pork cutlet, and again tasted more dry with food, with good length. Day 5: by itself, about the same as day 3. Tonight had motsunabe. Goes very well with it. Delicious!

Final nihonshu I felt worth remembering from my quick trip. Again at 日本酒原価酒蔵. Decided to try an ulfiltered at the end of the night to try something different. Interesting flavour, quite fruity with strawberry, dryness yet lingering flavour. Good with even oily foods. Good enough to remember (can’t remember the other 3 we had that night).

Asked for recommendation to go with sushi, saying we want a dry nihonshu. This “Kizan” (帰山), made with Miyamanishiki, is definitely dry (辛口) on the first mouthful, with a hint of fruit, then…. Nothing! No back palate. Then the food came; it refreshes the palate for the food, and interestingly with the charred maguro, the next mouthful of nihonshu had a lingering smoky taste! Would be a good light drink by itself but seemed like a good food nihonshu.

Went for dinner at 日本酒原価酒蔵 大阪本町店 to try different Nihonshu with food. They sell various Nihonshu in smaller bottles. Only this one and 鳳凰美田 wine cell stood out. First taste: Pineapple! Fruity but not sweet; perhaps slightly dry. Worked very well with the Wagyu don and chicken karaage. Delicious and easy drinking. Definitely buying a bottle to try it over several days.

Bought this at Utsunomiya JR station shopping area. 100% Yamada Nishiki First taste was pineapple and fizz, then sharp acidity that cuts through the fruity initial taste. Worked very well with mild flavours of Kyushu-style Mizutaki. After a few days, less fruity, but more savoury, very easy drinking.

Bought this seasonal nihomshu at Suehiro brewery when visited Aizuwakamatsu. When the bottle was first opened, it tasted spicy with bitter aftertaste. After leaving it for a few days, the spiciness reduced, with a caramel taste (but not sweet), and milder bitter finish. Like wine, nihomshu needs to breathe before serious tasting.

Bought from Ponshukan in Niigata Station. Alcohol 15% Light slightly fizzy taste with rice bitterness that lingers. Quite a light drink. Will be having with homemade barbecue chicken with たれ and grilled miso zucchini.

I’ve been keeping this one for a few weeks as I was disappointed on initial tasting, even thought it’s not namazake. As opened, it was spicy, with the taste of rice and hint of bitterness, then nothing! The taste did not linger at all! After 2 weeks in the refrigerator, I still get the spicy start, but not as strong, then a lingering savouriness with a hint of melon and pineapple, with stronger rice and touch of bitterness. Not up to the flavour of the other Fukushima nihonshu…

Drier nihonshu with melon, rice and bitterness at the end. Good with food, but I prefer the Yuho Yamaoroshi which I also tried which has more umami and longer flavour

Palate cleanser with slight spritz. Clean slightly acidic. Not heavy so great nihonshu to start by itself without food, but worked well with lighter snacks.

Always wanted to try this, and as the queue at Hasegawa Tokyo Station was very long, I felt that I had to make the wait worthwhile.😜 Not as mild as I expected, as a lot of JDG are very light; has a fruity melon, peach but also spicy. Delicious and worth the price for a special occasion; what more so than New Year Eve!

Was searching for more Shundei, but it’s sold at a different place. This is one of their rice from a single farm series; wonderful namazake. Opened with a pop, savoury with a melon finish and spicy, not too dry and well balanced. From a single field at Katakado, Fukushima. Delicious Nihonshu and worth the trip! Will try again a few days later to see how the flavour develops.
