Asked for recommendation to go with sushi, saying we want a dry nihonshu. This “Kizan” (帰山), made with Miyamanishiki, is definitely dry (辛口) on the first mouthful, with a hint of fruit, then…. Nothing! No back palate.
Then the food came; it refreshes the palate for the food, and interestingly with the charred maguro, the next mouthful of nihonshu had a lingering smoky taste!
Would be a good light drink by itself but seemed like a good food nihonshu.
