The same gentle aroma as the first sip, the firm umami of rice, and the moderate sweetness and acidity spread out with a touch of tanginess, and then it quickly fades away with a hint of bitterness.
It is mellow, but the moderate acidity gives it a refreshing impression.
It can be enjoyed on its own, but it is also easy to pair with a meal.
It went well with kawara soba (my wife's favorite Yamaguchi specialty, which we often buy at the local fair in Aeon) and a recipe for men's rice: oysters with hash browns.
It also went well with grilled kipper with salt and chilled tofu with yose-tofu.

There was a pusher when the bottle was opened, but there was almost no gassiness.
Sweet green melon-like aroma.
It is not as sweet as the first impression, but has a moderate sweetness and acidity, a fruity aroma, and a firm but not heavy rice flavor that spreads out and is cut off easily with a slight bitterness.
On the second day, it becomes even mellower.
Refreshing and well-balanced, this sake gives the impression of being easy to pair with meals.
Went well with homemade Bolognese pasta and Lawson's cookie puffs (cream cheese).

It has a gorgeous but mild aroma, a moderate sweetness, and a deliciously balanced umami flavor.
It is crisp and clean, and both the food and the sake complement each other.

I went to a liquor store in Hokkaido and asked for something sweet that you can only buy in Hokkaido, and they gave me the ultimate sake 😂.
I've never heard of it, so I looked it up on Sake no Wa and found a similar sake - my favorite Kawanakajima❗️ so I decided to go for it.
The aroma is different from Genmai, it smells like koji. I think it is. It tastes like a chili banana. Sweet fruity. So far, it doesn't have a Genmai feeling, but the feeling of the middle part of the nose and the lingering bitterness are like Genmai...I think. The bitterness and the alu taste are very strong. Good👍.
Izumi-sama, you're in Sapporo! The clerk said that only a limited number of stores in Hokkaido carry them ^^ Kamikawa Taisetsu was also spectacular with all kinds of them lined up!
