We received a summer jun from Mimuro Sugi, which is known for its variety of summer sake. The label also looks summery and delicious. Perhaps it is because of the label, but the taste is a bit like light rum. It has a sweet but refreshing taste with a hint of melon. It has no bitterness and can be drunk easily. Perhaps it would be delicious on the rocks. It might be good with rich sweet fruits like peaches.

After a busy week, I arrived home in the morning. It was late and I decided to have a beer today, so I opened the fridge and saw Mimuro Cedar... So I opened the bottle. The aroma is, of course, lactic acid. It also has a cemedine-like aroma, which I like. There is no gaseous feeling. The sweetness is moderate. The acidity is strong, but it is very refreshing. In the second half, after the acidity changes to astringency, it is short and sharp. The aftertaste is astringent. It is a stable Mimuro cedar and does not betray expectations. I think I can sleep well today.

Yesterday, on my guy's last day of work, I gave him two stock No.6s and a Zhi Now to celebrate. I can't let go of this X-Type though... Sorry! I felt selfish and awkward (lol), so I decided to open the bottle. Just like when I opened the X before, the first day was pretty bland. The aroma was slight and unimpressive. The sweetness is a bit faint, and the sourness is strong, but not noticeable. I'll give it three days, though, because last time it tasted dramatically better after a few days and I felt like getting down on my knees for Akita. On the sixth day, after much time has passed, the sourness has become stronger and the graininess has become a bit more pronounced. Maybe I left it too long, but I didn't see any dramatic changes this time.

We had fireworks with the kids today, so I opened a sparkler for the occasion. The aroma is mild, or rather weak. There seems to be a nuance of lactic acid somewhere, but it doesn't seem to be there. There is almost no sweetness, and the sourness and bitterness are dominant. It's a very dry sake, so I was a bit taken aback. However, it gives an excellent impression when served with food. A lot of reviews have already been posted, so I'll be brief. The aroma is citrusy and slightly lactic. Flavor is mainly sour, with some sweetness. The aftertaste is sour, quite short and sharp. It is very easy to drink. You can understand why it sells well.
