Junmai Daiginjo 殆生酛無濾過生原酒✨Aiyama🌾
The label on the back of the label "USE YOUR LIMITED LIVER FUNCTION" is a collaboration between Kagamiyama Shuzo and three liquor stores 🤣 It has a creamy aroma, a little bit of chocolate 🍫 and a little bit of spicy alcohol. Chestnut sweetness is also 🌰Iida Sake Store sells T-shirts with the logo "I can't afford to use my limited liver function for cheap sake. I'm not sure if this is a good idea or not, but it's a good idea.
I'm not sure what to make of it, but I'm sure it's worth it.

It looks quite yellow, but there is no twist 😋. It's very sweet and spicy. Good sharpness. I'll be back for more.

Junmai Porter ✨Biyama Nishiki🌾
The color is quite yellow to green. More rice-like, mildly spicy, spicy and crisp when paired with medina sashimi😳.
At 50 degrees, the sweetness increases, and the spiciness comes later. At 55 degrees, the spiciness is crisp to sweet, and it's very good with crab legs ⤴️.

Served cold, it has a creamy aroma, sweet umami, then spiciness and a bit of bitterness🤔. Warmed up, at around 48°, the sweetness and umami become more pronounced. Creamy. 50° increases the rice-ness ⤴️Warmed and cooled is good too😊.

Best served warm. 42 or 43 degrees will give it a sharp edge. 48 degrees is best👍.
It is also good at room temperature. Best with salmon and salted kelp. Mild, with a good acidity and sweetness. The spiciness comes later. It's good to drink. Okanshitsu, more rice-like. It's sweet and delicious.

Good acidity and slightly sweet taste, pleasant 😆 loose 🤤. It matches with chilled oden. I'm not sure if it's a good match for the sea bream soup or not, but I think the Kamikame goes better with the Iriko soup.

Junmai ✨ unfiltered raw ✨ sake
It's a great match for eel. At 40 degrees, the flavors are amplified (umami, spiciness, acidity, etc.), but it's a little rough. At 43 degrees, the rice flavor increases and it becomes calm. At 46 degrees, it's a little too much. The hit is too strong. It doesn't come back even if you cool it down 😢 it deteriorates by oxidation. It's not easy.
