The first sip is surprisingly fresh. It is light and smooth for being raw, but the sweetness of the rice can be felt and is refreshing. After finishing the first gou, the taste became richer and fuller. It has a freshness to it. This is my first Midorikawa. The rice is full of a sense of being firm.

Tonight's meal was a peach salad that I made as a trial. The fresh drink and the refreshing salad were a perfect match.

Anyway, fruit. Pineapple? Peach? The rice flavor, sweetness, and acidity are all there. A delicious sake that goes well with rice. It has a sharpness, but it's not just a refreshing taste, it's the best. On the rocks, it has a faintly bitter taste, which is interesting.

The first sip on the first day is refreshingly fruity with a slight effervescence. The fullness of the flavor and aroma gradually develops, and even though it's a pure sake, it has a nice sharpness. On the second day, the richness comes out and it is completely different.

The lack of egglessness is amazing when compared to other honjozo. It is like a junmai sake. It has a rich aroma and a strong umami flavor, but it is not heavy, easy to drink, elegant, and delicious.
