And the stewed fu (wheat gluten) as a side dish was too good to be true.
Junmai sake "Yuukyu no Hikari" by Sawada Shuzo of Joy Hikari. Another delicious sake with a delicious flavor. We enjoyed it with a light and rich meat sucking dish.
Special Junmai, Ancient Capital by Sasaki Shuzo in Kyoto.
It has a clean mouthfeel and a deep flavor. Delicious. With Wakatake (bamboo shoot) stew by Akagakiya. Delicious.
A great junmai sake with a lot of flavor. It has a mild taste and you can drink it as much as you want. It's so good!
It goes well with the side dish of firefly squid with vinegared miso.
Selected dry new sake from Yoshinogawa in Nagao, Niigata. The crisp mouthfeel goes well with the fat of grilled salmon (I'm under the delusion that it's from Murakami, also in Niigata). It is delicious.
Sasaki Shuzo's Nishinokyoku series. We had Hatsu-no-kiri and Aki-agari.
The flavor composition is similar, but the Hatsu-no-kiri is superior in that it is more refreshing.
However, both are delicious.
