Hearing that freshly pressed sake was for sale at 4:00 in the morning, I drove two hours down the road from my house to visit the brewery! The name "Kesashibori" is stylish! The koji rice is 50% and the kake rice is 70%. Dry, light nigori with a strong acidity P.S. When I drank it a week later, the curd was removed and the umami flavor came out. Stopped by on the way back from Tamba. When I asked for a tasting, I was taken to a dining room-like place where I was served a beautiful sake cup and tasted a generous amount of seven different kinds of sake! I was so surprised that they allowed us to drink so much! We bought a Daiginjo of my wife's choice! The rice used for the sake was Kyoto-grown rice called "Shuku"!
