It's been a while since I've posted since I've been sick all summer 😂.
I've been looking forward to drinking Snow Kayasha at home for a long time ✨.
I had an image of Yamahai as being somewhat heavy, but this is a beautiful sake that is light on the palate with a mild acidity and sweetness that makes it very easy to drink ✨.
Iburi Gako Cheese Potato Salad from the deli corner of the local supermarket!
It also goes well with this 🤤.

I had my first taste of Nabeshima special junmai sake the other day and liked it very much. This time I tried Yamada Nishiki✨.
It has a moderate flavor and aroma compared to most special junmai sake, with just the right amount of umami, a bit of acidity, and a slight bitterness. It is light and has a great balance 💯.
It is so easy to drink that I drink it while eating snacks.

I opened a bottle of Abe Summer Sake that I bought the other day🍶.
I didn't feel any gas when I opened it, but when I put it in my mouth, I felt a tingling sensation on my tongue.
Overall, the sweetness and acidity are quite moderate and easy to drink ✨.
By the way, the feeling of alcohol is almost zero lol.
This is a dangerous one too lol.

I found a Senkou Kabutomushi that I was curious about and bought it immediately ✨.

I had an image of Kyushu sake as being somewhat robust, but it is surprisingly light 😲 Light sweetness and bitterness centered on the umami and acidity of the rice. Anyway, it tastes smooth and refreshing, and the alcohol content is low, so it's easy to drink it without hesitation.
By the way, I had a snack of grated tofu with yuzu and grated ponzu. It goes well with it.

It has an Abe-like acidity but a very clear aftertaste, making it perfect for a mealtime sake!
I paired it with Tosa-ni (bamboo shoots simmered in Tosa sauce) and it went well with lightly seasoned dishes!

JUICE today from my recent favorite, Hishiko 🍶.
Very fruity and delicious✨.
They use yeast that produces citric acid, so it has a distinctive sour taste. The sweetness is moderate.
It has 16% alcohol content, but there is almost no alcohol feeling when you drink it!
As the name suggests, it really does feel like a juice, and it's easy to drink 💦dangerous (lol).

Koshinokanbai, a famous local sake that was once called "phantom sake" and was even counterfeited in the Tokyo metropolitan area.
Niigata is often thought of as a light and dry sake, but this one has a very mellow taste with a powerful rice flavor that would not be defeated by grilled squid with mayonnaise as an entrée.
