I had an image of Kyushu sake as being somewhat robust, but it is surprisingly light 😲 Light sweetness and bitterness centered on the umami and acidity of the rice. I think of Saga Prefecture and think of squid from Yobuko, but I wonder if it would go well with squid sashimi? 🤔
