I had the same shock as when I first drank something like Jyushiyo. It's been a long time since I had that feeling. I haven't had Niimasa for a few years, so I may be wrong, but I think the taste is similar. The acidity is good, and you don't get tired of drinking it. I was looking forward to it since I liked Hana-no-Kou since the first time I had it 6 or 7 years ago, but it was much better than I expected. And the cost is as good as ever.
Fresh & juicy. Excellent balance. The juiciness is strong, but not too strong. A bottle to be savored slowly on its own. I would like to drink it in the evening as if it were dessert.
Omachi Junmai Daiginjo.
It has a mild aroma and softness on the palate.
I personally like the balance of sweetness and acidity, and the sharpness of the aftertaste. I remember drinking Taikan a long time ago and enjoying it, but I wonder if the brand has changed now.
Onuma Brewery of Kenkunichi. It has a citrusy aroma with a clean aftertaste that makes it easy to drink. I haven't bought sake in a while, but I like it a lot. I got into sake from Hanahayo, Imi, and Machida brewery, and now my taste buds have changed again.
