Today, we opened a bottle of Bodai Hashiwado Yatagarasu. Takacho and Sanomorosugi, the three bottles are so spectacular when they are lined up in a row. By the way, when I tasted them in the Shorokakuji set, I enjoyed them in the order of Takacho, then Sanomorosugi, then Yatagarasu, but the order was completely opposite when I drank them at home 😀. Yatagarasu is the most refreshing and tastiest 😀. Today I tried to warm up Takacho's sake, but when the temperature went up, the sweetness became too much and it was a little too sweet 🤣. I'm not sure if it's because of the temperature range, the time since the bottle was opened, or the change in my sense of taste 🤣. But all three bottles of Bodhidhara are delicious and very satisfying 😀.

Today is the second Shorekiji Bodhi Hashiro 😀. We had the Bodhi Hashiwasashi from Mimorosugi 😀. Mimurosugi sells their sake only in Nara prefecture under the name of "Sanmorosugi" 😀. This sake seemed heavier than Takacho's when we had it at the tasting at Shorekiji 😀. So I decided to serve it with roast beef or Chinese meat dishes for today's entrée 😀. When I opened the bottle, I was surprised... unlike when I tasted it, the color was definitely clearer than Takacho and the taste was more refreshing 🤣. I think there are many factors like temperature and time to open the bottle 😀. But it went well with meat-based side dishes and was delicious 😀. The power of Bodhi yeast is amazing 😀.

Earlier this year, I visited Shorakuji Temple in Nara and met the members of Sake-no-wa at the Bodai Hashiroshi Hashimoto Festival, which got me more into sake 😇. At the Bodai Hashiwashi Festival, I bought these 3 bottles 😀. I walked down the mountain carrying the sake I bought at Shoreki-ji Temple, and when I almost fell down due to being knocked off my feet, my wife kindly told me to fall down in front of her, not behind her, and I managed to reach the station at the foot of the mountain without breaking any bottles 😇. I bought 3 bottles that I tasted at Shoreki-ji that I thought were delicious... Takacho-san, Sanomorosugi-san and Yatagarasu-san, but today I chose Takacho-san among them 😀. Takacho-san is a sake brewed by Yucho-san, who is famous for Kaze no Mori (Wind Forest) 😀. It looks dark yellow and gives the image of old mature sake, but when I put it in my mouth, it had a thick and rich atmosphere, but it was a very sweet and tasty sake that lingered in my mouth but did not have a bad taste 😀 It is a very high quality sake. It was a very high level sake and as expected 🤣. It was delicious! ❤️

Almost colorless and transparent. Aroma of citrus fruits. A full aroma reminiscent of lactic acid bacteria beverages. There is also a hint of kelp. The aroma is complex and mellow. I tasted 7 kinds of sake at the Seishu Festival at Bozan Shoryakuji Temple and liked them. I tasted seven kinds of sake at the Bozan Shorakuji Sake Festival and bought the Yatagarasu. When I opened the bottle, it smelled like pickles and rustic herbs. It has a delicious sweet taste when I tasted it, but the smell bothers me. By the second day, the pickle smell had lessened a bit, but it still bothers me 😥. On the third day, the smell is finally gone. When I tried heating it up, it tasted better when it was cooled than when it was lukewarm, as the umami flavor spread out and the mild sweetness was entwined with it.

I participated in a sake festival to unveil the Bodhi Hashiwazake brewing process in the precincts of Nara Bodhiyama Shorakuji Temple. The sweet and sour smell that pervaded the air soaked us. I was happy to be able to attend this event, which I have wanted to go to for two years. Thank you to Mr. Umaisan and Mr. Bouken who joined us from early in the morning. Thank you very much. It was cold and hard to wait for the bus at JR Nara station. The name of the sake brewed at Bodai-zan Shoryaku-ji Temple is "Bodai-zumi". The name of the sake is "Bodai-izumi", the origin of sake which is not brewed in stages. I was glad to be able to taste the "Bodai-izumi". It tasted like grape juice with lemon, or like a tart and delicious flavor of a sea cucumber. It was on sale, but at 16.500 yen for 720 ml, I couldn't afford it 😂.

I think this was the best sake tasting other than Takacho. It was the most popular among the members of Sake-no-wa 😊. In the end, we didn't buy any sake, only Nara-zuke (pickles) with Bodaihashi sake lees 😅. The rest of the drinks I've already had in the past, so I'll give you a quick digest. Ureshicho I drank this at the brewer's festival. It is less sweet and more complex than I expected. Sanomorosugi I think this one is the easiest to drink out of the 7 varieties, as it has no habits and no pungency. In my postings in the past, I wrote that it was light and easy to drink. Is this the type of Bodhidashi that is popular with everyone? Takacho This is the closest type to Bodai-zumi among the 7 types. It is too different in taste from the other 6 types to be treated in the same category. Personally, I like it the best among the 7 types. After enjoying the sake festival, we left Shorakuji on the 12:00 bus. To be continued.

Katsuragi Brewery took over the business last year due to a lack of successors. This year was the first year for Mr. Taniguchi, who took over the business? He looked like he was working like one of the Nara Sake Brewery Avengers, but he had a presence that was second to none 🦸. By the way, I wonder if there are any new members of Bodai Kenkyu, although some breweries have left the organization due to closure of business, etc.? Like Kikushi, it is dry but full-bodied and drinkable. I feel relieved because Hyakugakumon has many easy-to-drink dry wines that even I, who don't like dry wines, can drink. We moved to the tasting room. We greeted Usagigoten and Hirupeko who were at the venue. And we were able to meet Yasubeyesan and Kaorin, whom we met for the first time. Bodai Hashiro sake tasting set. 30ml of 7 kinds of sake, 500 yen with Narazuke (Japanese pickles). It seems they charge a fee like the Bodai Sen tasting. The first one I drank was the first Kikuji. I guess you can buy it in Nara, but is it mainly sold directly? I've only seen it at Masuda Shoten in Sennichimae 🤔. According to the information that came up in a Sake-no-wa search, the label on the back says it is unfiltered and tank squeezed. I drank it first because it was said to be the driest, but it was too light and not enough? It's too clean, or it doesn't have umami. I think it is too clean for being unfiltered. If I had liked it, I would have bought it 😅. Hirupeko-san said this sake smells like a beaker of softened water 😁 accurate description😊. The 4th picture is the soyashimizu in the beaker.

We participated in the Bodhi Hashiro Sake Festival held at Shorakuji Temple in Nara. I woke up at 5:30am, left the nearest station a little after 6:00am and got to JR Nara before 8:00am. It takes a long time because there is no rapid train running at this time😅. I met up with Ms. Umaï and Ms. Rutemi at the bus stop. I thought I was too early because the bus arrived an hour before, but I was sure I could sit down, so I guess I was right to be early. The bus left at 9:00. It took about 30 minutes to arrive, but the ride was uncomfortable and I almost got drunk 🤮. It was driving through places like that😳 The atmosphere was a bit somber as it was a temple. The brewing process is done in collaboration with the toji (master brewer) of each brewery, the brewer, Shorekiji Temple, and Nara Prefecture. After the opening ceremony, we moved to the tasting area. When the brewing process begins, a peculiar and indescribable aroma like cheese? A unique and indescribable aroma like a cheese? First, we tried an expensive sake. It is called "Bodai-izumi" and costs 16,500 yen. This label seems to be a limited edition Shorakuji label. The one sold at liquor stores has a more expensive label. The label on the back is a Kaze-no-mori (Wind Forest) version, but it seems to be made by the Kuramoto Sake Brewery. It tastes rich, sweet and sour, like a plum. Like a plum wine minus the sweetness? It may be obvious, but this is the best one I've ever tasted. Lucky to be able to drink this for 500 yen 😁. to be continued

I just realized that today is my 200 check in after seeing the comments from my sakewa friends 😀. Thanks to all of you for making my sake life so enjoyable... thank you so much 🙏. Today I went to Shorekiji Temple in Nara for the first time for the Bodhi Hashiro Sake Festival 😀. I left my house early in the morning and arrived at the temple after about an hour and 20 minutes walk from JR Obi Kai at the foot of the temple 😀. First of all, we paid our respects to the main deity, Myoo Peacock Myoo 😀. I prayed to the main deity for the early recovery of sake breweries in Hokuriku and for the sake lovers' sake luck to improve 😀. The temple staff was very happy to see us because they are from Hokuriku 😀. After visiting the temple, we watched the sake making process and tasted the sake 😀. We bought 3 bottles of Bodai-zenshuu from Takacho (Aburicho), Mimuro-sugi and Yatagarasu and carried them safely in our backpacks and went back down the mountain 😀 It was a nice mountain walk 😀. It was a good hiking trip 😀.

Nara Pref. Nara City. Kuramoto Sake Brewery Co. Bodai-zumi. Sake made from Bodai yeast, which I was interested in. And I visited "Bodai Hashiro Sake Festival" where a festival event of Bodai Hashiro is held 😄. The event is held at Shouryakuji Temple, the birthplace of sake (there are various theories), where the sake mother, called Bodai Hashiroshi, is brewed at the temple. Rice is steamed in lactic acid fermented water called "Soyashimizu" and tasted while being exposed to the unique fermentation aroma of cheese and yogurt 🤣. The aroma of the upper part of the bottle has a very subtle cheese aroma at the back of the bottle. It has a unique acidity and a solid sake feel that is not too robust and not too spicy. Not modern but not too classic. 500 yen for a tasting cup 🍶. Limited to 500 bottles a year, it was an unreasonable price to buy 😅. I was grateful to have it, thinking that this is the origin of sake in the Muromachi period 🙏. We also had 7 different kinds of sake brewed using the Bodai yeast for 500 yen (with a bowl of Kuramoto Sake Brewery's Narazuke) and a cup of sake lees soup for 100 yen each 😋. Oh! Sweet sake lees soup, yummy! I thought, but this year it was made with sake lees from Kaze no Mori's Aburanaga Sake Brewery😋. There used to be about 12 breweries that belonged to the "Nara Prefecture Bodhi Hashiwase Sake Brewery Study Group" but the number has been reduced to 7...
