Tonight, we had a sake pairing with a full course crab dinner at a famous ryotei restaurant in Higashiyama, Kyoto, the king of winter delicacies. We started off with a sparkling unfiltered unpasteurized sparkling sake made with Yamadanishiki from Sentori Modern 🤍.
It has been a long time since I have had a snowball, but I have the impression that it has a much drier taste. Overall, I think it has become cleaner and lighter. Combined with the low alcohol content, this sake is easy to drink.
I've had Sentori from seasoners (Snowman, etc.), but this may be my first sober Sentori.
There were three types of Sentori: Ara, Naka, and Seme, but I bought the Naka.
The pleasant gasiness, sweetness, and fresh aroma are very good!

This is SENKYO we got in Tochigi!
You can forget that it is sake and drink it easily. If I had to pick a favorite, I would prefer the more acidic Kabutomushi.
A fresh bottle with a bit of gas. Like a snowball, this sake is made using the "assemblage" method of combining multiple sakes, and is fun to drink. This is truly a value SENKYO. Nanchitte (laugh)
This is a sake that I had been curious about for a long time, but I was afraid it would be too much like wine. I told the waiter about my preferences and was told that this sake was the easiest to drink, so I bought it.
The aroma was gorgeous, but it had a strong gasiness, acidity, and a refreshing finish that made it stand out as a wine-like sake. If this is the sake that was said to be the most suitable for our tastes, I don't think we will be able to get our hands on any more of the SENKYO series.
We received a snowman from Senkori.
It is a winter staple in our house. Winter cannot start without drinking this.
When you twist the cork, you can feel the bubbles rising. It is not as strong as last year's gushing bubbles, but it has a slightly carbonated level of gas.
When you drink it, it tastes like a snowball, just like a snowball always tastes. Once again, I felt that the 10-month-old Snowball I received the other day was a waste, and at the same time, I realized that I should drink it as soon as possible.
I had it with gratin that day, and the creamy gratin went well with the silky texture of the snowball.
The contrast between the hot gratin and the cold, sizzling snowman was pleasant, and I was stuck in an endless loop.
I have another bottle of this in my collection, but I think I'll drink it over the winter instead of storing it for a long time.
Senkou UA Snowman
Compared to the normal Snowball we had before, the UA has a mellower acidity and is easier to drink 🤔.
Less sweetness, more umami and sourness, and a chili sensation 😆.
The lactic acidity and rice flavor through the nose is amazing!
