It was kept in the fridge, so it's a relief that the taste didn't change. The acidity is not too assertive and gorgeous, very tasty 😋.
100% Yamadanishiki produced in Sakura City, Tochigi Prefecture
Polishing ratio: 50% for koji rice, 60% for kake rice
Very tasty.
Aromas of yoghurt, pear, rice, volatile acidity and carbonation.
Smooth and highly carbonated, with a matte mouthfeel at the back of the throat.
Deep sweetness and rich flavor that comes out slowly. Light acidity and a hint of bitterness. The flavor is beautiful even though it is cloudy, and the presence of rice can be felt more than last year.
Match with squid sashimi, hot tofu, bonito tataki, potato salad, and shrimp bisque.
I am not a big fan of Senkou, but I bought it because I heard that it is not that sweet and refreshing even though it is a kijo sake.
It has a gluey aroma like Kaze no Mori, but not as sweet and clean.
I haven't bought Yukidaruma in a few years, but it was good enough that I would consider buying it again!
There were various candidates for today's bottle, but I decided to go with Sanshiki-sama for my shuwa mood without worrying about whether or not it would go with the meal 🎉!

Sanshikisama has a subtle sweet aroma with no sourness. Yellowtail sashimi, grilled squid, fried sea bream chikuwa isobe, all are good and easy to eat while being shuwa. ‼️It goes well with both Japanese and Western food. ❣️

Last time we opened the bottle without knowing it was sparkling.
I opened the bottle carefully 😅 after having lost about 10% of the total amount of sake due to the sake spewing out.
Naturally delicious 😋.
Just like the last time I had it.
The old-fashioned taste of old-fashioned sake with a hint of old-fashioned sake yeast hidden in the modern sparkling taste.
I have the impression that rather than a balance of flavors, it's more like a perfect balance of eras👍.
