The other day, a triumph.
Tsubameishi, the highest grade of Etsukaijin. Yamadanishiki from Hyogo Prefecture, 35% polished rice.
It is not at all like the popular "sweet and delicious" sake, nor is it light and dry, but it has a strong umami flavor but is dry. It is not flashy, but in a sense, it is the royal road? It is very tasty and full of flavor.
I started studying sake this year and have had a few well-known brands, but I feel that this sake is unique in its taste. Maybe I'm just a Kagawa fan.
It's a raw sake, but they say it tastes even better when it matures.
I think it is Kagawa's pride and joy.
