This sake is often used at ryotei (Japanese-style restaurants) and ryokan (Japanese-style inns) in Kyoto City. When I tasted it, I felt a strong alcohol taste, but when I drank it later, it was a wonderful sake with a dense sweetness and moderate smoothness.

Nama-zake from Kitayama, Kyoto. It is a junmai ginjo with a strong rice flavor style, rich and powerful, with a freshness and sweetness typical of nama-zake. It also has a nice thick texture.

Unique taste. This may be the first time I have had this type of sake. The aroma is not easy to drink, but the rice polishing ratio of 40% makes it easy to drink. I am not sure if this is due to the fact that it is not junmai (pure rice), but it is an unusual sake with a strong peculiarity, yet it is easy to drink. I could taste the rice, but I could also taste the alcohol-like flavor.

This year was the first time for me to visit the brewery. I heard that the brewery was visiting Mitsukoshi, so I dropped by on a whim and thought, "Huh, there's a kind I've never seen before. To be honest, it was expensive, but I was determined to buy it. The aroma is strongly lactic. The aroma was strong lactic acidity, with citrus and honey notes. There is almost no gassiness. I wonder why I can't find any brewed forests with a strong gaseous taste. The sweetness and acidity are much stronger than last year's Junodai. It is more acidic than last year's Jun Dai, which I drank last year. Maybe that is why it is more drinkable than expected. The second half is basically sweet and sour as well. But strangely enough, it is drinkable without being unpleasant. Perhaps it is because the aftertaste is surprisingly refreshing. Since I drank it before, it was quite a while ago, so it is difficult to make an exact comparison, but it was much easier to drink than I expected. It's just plain delicious.

I remembered that I had a 300ml bottle of "Jyosu Mori" lying around, so I opened it at night. I thought it would be okay because it was fire-retarded, so I turned it upside down to let the ori down and opened the bottle, but then I heard a swooshing sound coming from the bottle. I was one step away from spilling it. When I took a sip, I could feel the strong gas and smell the lactic acid. Indeed, this is Calpis. Very mellow sweetness and flavor. Very delicious. You can also feel the acidity, and the balance is good. The aftertaste is astringent and slightly bitter, and the sweetness remains on the tongue after a short time. This may be a characteristic of Jyosu Mori. The Junmai Daiginjo raw sake had a strong eggy taste and a sweetness that lingered on the tongue on the first day (it changed to an impressive finale on the third day). On the other hand, this Junmai Ginjo Hi-ire has a perfect balance of sweetness, umami and acidity, and it moves forward quickly from the first day. It's a taste that lingers, and I can't seem to resist drinking it all today. Why didn't I buy the 4-pack?

I went to Nespas in Harajuku, but they didn't have it, and on my way back home, I found out that they had opened a store in Ginza Mitsukoshi. I got it safely. When you taste it, a strong aroma goes through your nose. It's difficult to describe the aroma, but it's sure to be lactic acid type. The sweetness is strong and lasts until the aftertaste. However, it is not so disgusting. The acidity is also quite strong, but relatively short. For a moment in the middle, you feel as if you were drinking yogurt. Strange. As for the aftertaste, the sweetness continues as mentioned above. When the ori is mixed, the delicious taste is added. The bitter taste is not felt so much, but the aftertaste like the gummy remains. Overall, it's a flavor I've never had before, so it's difficult to evaluate. On the third day, the sweetness subsides and the sourness becomes more pleasant. A true yogurt juice. Very tasty and I will definitely buy it again when I come across it.
