The aftertaste lingers for a long, long time, but strangely enough, it is not too strong. In other words, mellow and dry? I guess you could call it mellow and dry. It is written as "fruity," but I think it has a strong bitterness to be called sweet. It is difficult to explain for beginners. But I really like it! Cheese goes really well with it.

100% Miyamanishiki produced in Akita
Polishing ratio 50%.
Alcohol 15%.
Chirichirifresh, classic aroma and flavor, but with a fruity and complex taste.
Sweetness, slight bitterness and spiciness.
Daiginjo-style clean taste, but with a good sense of drinking.
When I tasted it, I thought it was fruity and modern, but... maybe I was drunk 😂.
Day 2, the complexity comes together nicely and tastes like it did when I tasted it!
The base is classic but also modern and delicious... ♪
Day 3, I could feel the melon🍈 here!
In the end, this day, the most fruity, was my favorite 😆.

This brewery is located in Uozu City, Toyama Prefecture.
The rice is polished to 50% Miyamanishiki produced in Akita Prefecture.

The aroma is fresh and muscat-like, the rice flavor is full and juicy, the acidity is fresh, and the taste is pleasantly crisp.

It is not a powerful unfiltered raw sake.
Toyama food tour in spring without using any Hokuriku Ouenwari (tearful) 🌸 Following Toyama city and Toga village, the third day was in Uozu. The second stop was Sushi Daimon, which is a must in Uozu 🍶.
The second one was sparkling for some reason. I don't know why I didn't think it should be a starter, but it tasted good and was okay. The gas pressure was not strong, but the bubbles were strong. It has acidity and sweetness, so it's pretty good 😆.
Lid is stiff.
Thin lactic acidity, slightly sweet fruit-like smell.
Lemon and plum-like acidity emerges from the thin rice mouthfeel, finishing with rice-like flavor acidity and a hint of sweetness. Delicious. It is refreshing and easy to drink.
The lower the temperature, the more refreshing it is.
