Here is the description
Using Yamada-Nishiki polished to the limit of 23%, we challenged ourselves to make the best Junmai Daiginjo.
It has a gorgeous heady aroma, a beautiful honey-like sweetness on the palate, and a long, lingering aftertaste that finishes nicely after swallowing.

I drank many kinds of Otters, but there's not enough to list them all, so I'll just mention two that I've never had before.
The second one is the flagship of Otters, Niwari Sanbu, but it's not just Niwari Sanbu, it's Nama Shu. An unlikely one. Otters are basically fire-aged, so it's quite rare to have a nama-shu, isn't it?

The first one is a low-alcohol Ottersai. It was 11 degrees Celsius. It's easy to drink, but this one is even easier to drink. It is a dangerous drink that you can drink as much as you want 😆.
Only one glass of "Shine and Beyond" was offered to each person. I've had it many times before, but this time it just wasn't the same.

Maybe...I like centrifugation. The first time I thought centrifugation tasted good was with "Hokusetsu. It was refreshing and easy to drink. This Ottersai is a Junmai Daiginjyo with 20% to 30% polishing and centrifugal separation, all the elements I like! I'm sorry for drinking such a great sake!
