I'm trying to improve it by trial and error...
I'll take it as a positive failure.
I can't wait to make the next batch, but I don't have enough buckwheat flour 😭

Since I could not buy Shinshu Kamerei🐢, I thought I would at least buy another local Shinshu sake, so I bought Zenkichi💰.
I was told that this sake was brewed with a test rice called Shinkosyu 557, Yumemi-nishiki.
It had a muscat aroma, so I thought it might be a strong shade of my father's Yamadanishiki.
The taste was deeply sweet, but also sharp, so I thought it would not be tiring to drink 😁.

The first time I opened the bottle, it had a characteristic sourness, but after letting it mature in the air, the sweetness and umami increased........................but it also had some bitterness 😆.

The aroma is a fresh jungin aroma. One sip and the concentrated sweetness is followed by a refreshingly crisp taste on the nose. ❗️❗️

It smells good and tastes good.
