Today we had a dinner course with sake at Chopsticks restaurant in Okayama. Takase from Nagano as an aperitif and appetizer. The transparency and gentle sweetness are soothing.

Fresh cedar aroma overlaid with fruity aroma like pineapple and pear.
It has a pleasant apple-like sweetness and flavor and a minerality that passes through the tip of the tongue.
Acidity, bitterness, and astringency come together to create a well-balanced mouthfeel.
This is a mid-meal type sake that goes well with dishes covered with rich and aromatic sauces.

When I put it in my mouth, the rich sweetness and flavor spreads, and a sense of happiness, different from yesterday's Abeno summer sake, fills my mind and body. (^○^)

のちをI was told to buy a bottle of something to go with it, so I decided on Ryusuisen, which has a cool bottle.
I was told that the name "Maaki" is written "Omi" (meaning "Omi" in Japanese).
The content is 700 ml and the alcohol content is a gentle 13%.
The refreshing sweetness from the grape flavor hit me, and I was able to manaize it easily.
It is a bit expensive, but it looks cool and will be useful for celebrations and such.
This was also Miyamanishiki.

I heard the brewery is in Shinshu Omachi, but this is my first time there, so I'm really looking forward to it!

Aroma of apricot with a touch of alcohol added to give it a sharpness.
It has a similar aroma on the palate.
Sweetness and sourness reminiscent of strawberries and cherries come first, but the bitterness soon catches up with them.
And then it quickly finishes...
However, on the second day, the flavor changes to the aroma of melon🍈.
The sweetness also changes to ripe melon🍈.

Ryuusuisen" Tenku Yamae Nishiki 🏔️
This is a brand of Ichinoya in Shinano Omachi, Nagano Prefecture.
Two toji (brewers) brew always delicious sake, Yamahai and Namaho.
It has a refreshing cedar aroma, a characteristic bitter taste, and a nice clean sharpness🙆.
I wonder if they are able to do this because of the area's very good water.
I hope to visit Nagano again this year!
