I saw it featured on the Instagram of my favorite liquor store and immediately went to buy it when I saw how delicious it looked ❤️!
This is a new sake brewery that was established in Kochi in 2024 by a former toji (master brewer) of Kameizumi for about 20 years.
The sake is made with special grade Yamadanishiki from Hyogo Prefecture and a yeast called Little CEL24, which is different from CEL24.
It has a gorgeous pineapple-like aroma, melon sweetness and flavor, and is very easy to drink.
The second day after opening the bottle, it became mellower and tastier!
I thought the brand name "Clouds in the Mountains," the name of the first sake "Zaaa Zaaa," and the design of the label were all very nice, feeling fresh and new, but also simple and neatly Japanese in their beauty!
Somehow, it reminded me of a poem by Kenji Miyazawa. Kenji was from Iwate, and this one is from Kochi, lol!
I've seen this brand at Sake-no-Wa from time to time and was curious about it 🙄.

The taste is so fresh, clean and fruity that it's hard to believe it's fire-roasted 😚.
It's a modern sake with a good balance of sweetness, flavor, and acidity 👍.

There is now a distributor in Osaka, but it is too far away, so you can buy it at the antenna store in KITTE.
The yeast used is CEL24 and Super CEL24.
Fruity, pineapple-like, and slightly effervescent. The first half is sweet, but the second half is a bit bitter. I thought it was sweeter than another product from the same brewery that I drank at a previous event.
I guess even Gohyakumangoku can be like this when CEL yeast is used 🤔.
When the temperature goes up, it becomes a little more sake-like.

The third bottle was a bottle of Carrara Carrara by Clouds in the Mountains, which I had bought the label for!
As the name suggests, it captures the sound of the wind blowing down from the cold windy mountains of Kochi, I hear, and it captures my imagination even before I drink it 😋.
The aroma is sweet, with a hint of white peach. In the mouth, a light, fruity sweetness spreads first. What follows, however, is a crisp, sharp sharpness reminiscent of an empty wind and a slight bitterness. The sweetness does not linger on the tongue, but recedes quickly, making it very easy to drink.
There is not much of a sense of microbubbles, but the light spread after drinking is pleasant 😄.
This lightness makes it excellent as a food wine.
It has a gorgeous but clean aftertaste, so it does not interfere with the flavor of the food. It seems to be easy to match not only with Japanese food but also with Western food.
I was surprised at the high degree of perfection of this sake, which is produced by a new brewery.

The description on the menu says it has a green grape flavor, but the dominant nuance is actually refreshing fruit with a slight rice flavor. It's definitely a modern flavor, but it's a little weak.
