This is the newest brewery in Kochi, established in 2024 by Takahisa Kawazawa, the toji (master brewer) of Kameizumi Sake Brewery.
Yama ni Kumo no Karara Karara ◉Yaman ni Kumo Karara
The sake rice is Gin-no-Yume and the yeast is AA-41, which I had heard tends to give a banana taste, but this one has a sharp citrus acidity. It has a Junmai-shu character and is somewhat modern.
Clouds over Mt.
Sake rice is Gohyaku-Man and the yeast is AC95-80.
This one has a milder acidity and is more like a standard sake. Sharp standard.
Found an unknown brand at a liquor store and bought it because of the name and label.
It seems to be a new sake brewery that was established last year in Kochi Prefecture.
The taste is dry but also sweet. I've been enjoying some Kochi sake at home that I bought on a recent trip, but it's different from the sake I've been drinking. The label and the name of the sake are very particular. 70 points.

There was another type of sweet sake, but I chose the Tokujun over the Junmai Daiginjo.
It was a good choice. It was Kochi and refreshing, but it was dry and good with umami and sweetness.
Not too Kochi, not too sweet, I would like to try many kinds of sake.

I think I bought sake everywhere during GW, but I bought this one at a place in Saitama for the first time. The label caught my eye, so I bought it.
It has a nice ginjo aroma and an ama-like taste, followed by a bitter or astringent taste. After the moderate ginjo aroma and ama-ama feeling, a bitterness or astringency followed. I thought that this pattern might not be so common. It may be an addictive taste.

I heard they use a yeast called Super CEL27.

A sake brewery in Kochi opened a store at Harukas for a limited time.
Today, the first day of the event, Kawazawa Sake Brewery, the newest brewery in Kochi, was here for tasting and sales.
The toji (master brewer) of this brewery has 20 years of sake brewing experience at Kameizumi Sake Brewery.
I had a chance to taste the whole range of their sake, which is generally less sweet and more refreshing than Kameizumi cel's. 🙆♂️
This time, I bought this limited edition sake that suited my taste.
It is fruity with a firm acidity, and is one that even beginners will like.
It was delicious 😋.
