HYOGO SAKE EXPO 2023" 8 Tsubozaka Sake Brewing Company "Yukihikosan", Himeji City, Hyogo Prefecture Founded in 1629. Yoshiaki Tsubosaka, the 16th generation head of the company, is the current owner. He graduated from Tokyo University of Agriculture with a degree in brewing. The brewery uses subterranean water from the Mt. Yukihiko mountain range and naturally ferments its sake without any temperature control equipment. Junmai Yukihikosan. Impressive for its robust rice flavor. It is said to go well with salty food. Junmai Ginjyo Yukihikoyama Unfiltered Unrefined Sake Very rich and delicious. It is said to go well with hamburgers with tomato sauce. Daiginjo Yukihikoyama A little expensive, but not impressive because it is too refreshing. Junmai Ginjo Yukihikoyama Yume Nadeshiko The floral yeast aroma reminds one of floral yeast. The taste is also fruity and sweet. The brewery staff talked a lot about pairing and dishes that go well with sake, and it was interesting to hear about sake and wine and palate flavoring. He told me that they had used other types of flower yeast, but this was the only one they could sell. He said it was because the aroma and taste were not flowery enough.

Nadeshiko yeast sake. Is it one of the most gorgeous and fruity of Yukihikoyama? Gorgeous and gently sweet. Bitter at the end with a short aftertaste. It has a wine-like atmosphere. It has a unique flavor common to all Sesshikoyama wines.

Hello bouken! I see you bought Nadeshiko yeast: ❗️ I also compared Asano-san's Yukihikoyama Fair and this one was my favorite.

Good morning, Yoohee-san. I went into a local liquor store and bought this one, which I've never had before because I didn't want anything in particular 😊. I think it's the easiest to drink of all the Yukihikosan 😋.

Good evening, bouken 🌙 The other day, I had a glass of Yukihikoyama Junmai Ginjo Unfiltered Genshu at the sake bar "Trial" near Himeji station. It was my favorite 🤗. I heard that this one is the easiest to drink, and I would love to try it if I can find it.

Hello non non 😃 I'm glad you tried it 😊It looks like a fun place with a lot of different sake from Hyogo 🤗. I personally recommend it because it's fruity and sweet in Yukihiko 😋.

I got this one from my husband's parents' house! The leaves at my usual photo location have evaporated and died after sucking up water during my return trip, so today's photo feels lonely. LOL! This is the first time I drank it. It's pretty much like "the sake," but the aftertaste is refreshing and delicious. My husband doesn't like the taste of sake, but he said it was delicious, so maybe it's relatively easy to drink. I will drink it again if I see it somewhere!

The second party was a small sake bar run by the former brewer of Senzuke in Nakazaki-cho, which Nemuchi had been curious about ✨. There were many brands that were sold out, but Gura and I chose Yukihikoyama. Until then, I had no idea it was the name of a famous mountain in Himeji💧. I was reminded that even though I live in Hyogo, there are still many places and breweries that I don't know about. This is one of the good things about off-line meetings 💡. I thought about it a lot, and I realized that Asano-san in Sannomiya, where I usually go, sometimes has them, so I reflected on the fact that I haven't been looking at them properly. This time, I had the standard junmai sake served cold, and it was perfect for this time of the day, with the umami of the rice spreading across my tongue.

Good evening, Mr. Yoohee 😃. I didn't dare to choose Yukihikoyama because it is available at a local liquor store 😅There will be a Yukihikoyama fair at Asano-san in September, so please come!

Good morning, bouken-san! It seems to be easy to get them in Hyogo prefecture. I did see Asano-san's announcement and thought, "Ah! I'd like to go there and compare the drinks ✨. I'd like to go there and compare the drinks.

I was attracted by the limited time offer... I was so excited by its gorgeous aroma and elegant wine-like aftertaste that I ended up drinking a whole bottle 🍶. It goes well with cheese and marinated octopus.

Junmai Ginjo Polishing ratio 60 Dry taste You can feel the delicious taste of rice. It is not the type that can be drunk smoothly, but you can feel the strength of sake. You can feel more alcohol than the alcohol content (15%). Sensation of heat in the back of the throat The aroma is mild. Chilled Spiciness is suppressed and the taste is refreshing

I see that it is read as "Sekepikozan". If I had not drank this sake, I might not have been able to read it correctly for the rest of my life. The taste is fresh and quite rich. The bitter bitterness comes out in the back of the mouth, and the taste is sharp and clean. The sweetness is modest for Aizan, and although it is not the modern type of sake, the umami flavor is very well conveyed. Not bad!
