Moderate ginjo aroma
Sweetness, volume with aroma (strawberry, lychee). It has a voluptuousness with sweetness and aroma (strawberry, lychee, etc.). After a summer of cold storage in the brewery, the taste is mellow, rounded and elegant without corners. It has a slightly dry finish with a moderate acidity and a smooth convergence that will not bore you. A seasonal product sold only in Nagano Prefecture.

Second day in Nagano. We went out for a drink as usual.
It was the day when the ban on hiyaoroshi was lifted, so I was shown hiyaoroshi that were not on the menu and drank 5 different kinds (5 gou!) of them. It was a very lucky day because 4 bottles were opened.
We drank Daishinshu, Kokoromi (Nakazen Shuzo), Saku-no-Hana, Jyukyu, and Togakushi, in that order.
I'm posting this one because I don't get to see Daishinshu on tap that often. It's a calm and delicious wine, I don't have the vocabulary to describe it, but it's good anyway, and the balance of sweet, sour, and bitter flavors is so good that it's hard to distinguish any of them. The pretty one is the nineteen, though: 🐻❄️❤️
I drank a lot. I slept well, I thought, but I also had nightmares (mostly work), so I guess I didn't sleep well💦.
It is crisp and clean, with a slight bitterness. It is not too sweet and does not interfere with meals, making it a perfect "in-between meal" sake.

This hiyaoroshi is brewed with koji suitable for daiginjo-shu and matured slowly in the cold storage cellar of the brewery for a whole summer.
It has an apple-flavored aroma blended with fruity and acidic flavors, a gentle and smooth mouthfeel, a mellow, ripe taste of rice with a hint of fruitiness, and a dry, refreshing finish 😋.
It is a perfect match for the taste of autumn!
