We enjoyed this sake so much in September that we had to have another one!
It has a fresh, apple-like heady aroma, and the gasiness is a bit subdued, but still refreshingly stimulating to the throat.
Smooth and silky to the touch, with rich sweetness and umami spreading across the palate, it finishes crisp and clean with sweet and sour acidity. It is still delicious!

I had a strong image of dryness in Daishinshu, but I found Teppai and Inamitsu to be very tasty with a stronger sweetness than I had expected as well as umami. The "Code-breaker" was drier than the others, and although it was served cold at the tasting, it might be better warmed up.

The sashimi was excellent to start off with, so we chose the Dai-Shinshu. The super dry sake was more crisp and my drinking companions and I soon emptied the four-goupe bottle.
The top aroma is a gorgeous ginjo aroma, reminiscent of pear, similar to that of otters. The mouthfeel is smooth, with a soft sweetness, a full flavor of rice, and after swallowing, a slightly subdued acidity, and a lingering bitterness. A modern type of sake that everyone likes.

The mouthfeel is thick and slightly effervescent. The flavor is sweet and gentle on the backside, flowing from sour to bitter. The aftertaste is slightly bitter-sweet and crisp.
