shinsaku3Overall 9 (out of 10) This is the second sake I visited Daishinshu Sake Brewery on 4/28 and purchased! It is a sake matured in a windhole! It is a clear, dry sake. The spiciness gradually disappears, leaving instead a nice bitterness and a subtle rice flavor in the aftertaste. It was served very cold. The aroma I felt was  -Aroma: Pungent rice aroma  -Aroma: A pungent rice aroma. Taste sensation The higher the number, the stronger the taste (5 is the maximum)  -Spiciness: 4 at the beginning → 3 in the aftertaste  -Sweetness: 0 at the beginning → 0 in the aftertaste  -Sourness: 1 at the beginning → 1 in the aftertaste  -Bitterness: Start 2→ Lingering 4  -Astringency: 1 at the beginning 1→ Lingering 1  -Rice flavor: 1 at the beginning → 1 lingering 1 Mouthfeel I felt】→3 Smaller number = smooth Larger number = thicker and richer (5 is the maximum)

ぺっほClear but mildly dry. Shime saba (mackerel), fried gizzard, homemade pork loin ham (mustard, maple syrup, sweet soy sauce!) Asparagus with poached egg. Sweet, sour, astringent, salty, all complemented by Dai Shinshu😍.

ルテルテミPurchased at Hankyu Umeda Main Store, 9th Traveling SAKE I had a chance to drink it outside several times, but this is the first time to drink it at home. I was curious about the level of super dryness, but the aroma was refreshing, like 🍏. It also has a light sweetness. The sharp spiciness that soon follows and the umami of the rice is delicious 😄. The fur and the apple-like flavor that spreads when the wine is sharply cut are pleasant. My daughter, who came home for the first time in 10 months, drinks with me, so the sake goes down fast 😂.

のちをHanpukai sake. Usually Teuchi is said to be hi-iru, but this one is said to be raw. It has a very gorgeous aroma. The smell makes it good. The taste is rich. It has a firm sweetness and umami. The slight sourness is delightful. Goes better with light meals than strong meals. I was drinking it with snap pea mayonnaise as a side dish, but I don't think it goes well with mayonnaise. I am happy to drink something rare.

りゅうじ2号The initial aroma is slightly fruity. When you take a sip, the sweetness fills your mouth with a gentle acidity. This is delicious. It has an image of being sweet, but it is easy to drink because of its sharpness. It has a thick texture on the tongue, yet it is light. It has a fruity aroma. It is good both during meals and on its own. It goes well with firefly squid and camp rice. I want to drink it again. It is my favorite! Hitogokochi Polishing ratio 59 Alcohol 16%.
