The third bottle was Jusui, a local sake from Tsuruoka.
This one was sweet and juicy, with a sweetness more like Wasanbon sugar than fruity.
The brewery seems to be a neighbor of Eiko-Fuji's brewery, but it was as good as Eiko-Fuji!

I heard this sake is a mix of special junmai and junmai daiginjo 🍶.

Jumizu Special Junmai Summer Sake.
Jumizu is a brand of sake that is brewed with a 1:1 ratio of water and rice to produce a rich, umami and sweet taste of rice, but this one is intentionally watered down and served as a summer sake.
So it has a lightness as if it were watered down with water, but with a strong umami flavor that comes through on the first sip. It is an interesting experiment.
The manager of Fukuno Tori Kanda is such a sake fanatic that he is almost the only person I can entrust with the selection of the sake I order. So I enjoy listening to his explanations of the sake.
I enjoyed the raw sake I drank before, so I immediately buy Jusui when I find it. This time it was a sparkling sake.
When I tried it, I found it to be less sweet and less fizzy. The taste was a bit unexpected. I thought it would be a good sake for those days when you want a crisp drink but also want a bubbly taste.

Jusui is one of my favorite sake!
I haven't had a special junmai since I started sakéwa💦.
This is a mellow, full-bodied sake brewed with the "tojumizu brewing" method of the late Edo period. This junmai sake has a perfect harmony of umami and sweetness. The nigori component is left in and the effervescence caused by the secondary fermentation of sake yeast in the bottle is contained in the "Jumizu of effervescence.
