October 2018, at the usual tiger's eye. Together with seasonal ginkgo. The brewer is "Limited Partnership Miyajima Sake Brewery" in Ina City, Nagano Prefecture. I am attracted by the simple but impactful label and text.

6/10 Zankuro's mellow dry sake with a cool, simple label. This one is a draft type. The brewer is particular about Miyamanishiki and sticks to dry sake. The sake is clean and crisp, and is indeed what one would expect from a dry sake. It has a slightly mellow, apple-like aroma. It is said to be from the same brewery as the Shinanonishiki sake we had previously tasted, but the type was quite different.

100% Miyamanishiki grown under contract with reduced agricultural chemicals Rice: Nagano rice, Koji: Nagano rice, Polishing ratio: 61%, Alcohol: 16 Slightly cloudy. The aroma is rich, but the taste is crisp and dry, typical of Zankuroku. This is the first time I have tasted Zankyuroku's nama-shu. Perhaps it is because I am getting older, but I have come to prefer matured sake to nama-zake.

April 2017, at the Tora no Kai, Shibuya, Japan. Local sake made with rice and rice malt from Nagano Prefecture. The brewery is Miyajima Sake Brewery in Ina City, Nagano. I had too much Nama-shu in stock to drink first. Finally drank the new BY4 sake! Mellow and dry! I usually prefer sweet sake. I am usually a sweet person, but the freshness of this wine is well expressed. I'm convinced it's a gem! Dry wine is also good sometimes!

#Zankuro #Special Junmai #Miyama Nishiki #Polishing ratio 61 I don't often drink dry sake, but once in a while. It's refreshing and tasty. Maybe because it is Miyamanishiki. It seems to be brewed with 100% Miyamanishiki grown with less pesticides. Next time, I would like to try Jungin. And, surprisingly, this is the first sake from Nagano. I'm going to try to conquer the whole country before the 200th check-in! Recommendation I recommend it!

For supper. Delicious acidity and sweetness. Great sharpness. The label on the back says "Mellow, dry, cut, clean. It is a food sake that goes well with everything and you can taste the deliciousness of the sake. I found it at a local sake shop in Azumino. The meal consisted of pork miso soup, grilled chicken, simmered pork leek and shimeji mushrooms, soaked spinach, and edamame (green soybeans). Well, it is a sake drinker's dinner.

As the label says, it is mellow and dry! The aroma of rice flavor was subtle at the moment of drinking. It was dry and refreshing as only a dry sake can be. I thought it was a good aperitif.

This is my first brand. I didn't expect much, but it was delicious and a pleasant miscalculation. The acidity is delicious. It is easy to drink. It is like a summer sake. It has a long aftertaste. It was a hit.

This one also has the same 91% remaining as the Chogen. The color is amazing, like an old sake. There is almost no aroma. I realized again that Kinmon-nishiki sake rice is really delicious. I guess the brewer wants to make it a jungin, not because it is junmai, but because it is delicious, and wants to bring it to the level of daiginjo. As expected of Mr. Miyajima. Kinmon Junmai. Very good! It conveys straight away that this is what umami is all about. Everyone will find it delicious. Now it's time to see how it goes with food. We will try that from now on.

Kinmon-Nishiki 91% polished rice The nose is ripe muscat with a slight astringency. Aromatic rice flavor. In the mouth, the soft and gentle flavor of rice spreads. There is also a strong sweetness reminiscent of rice confectionery or cotton candy. As it is swallowed, a nutty aroma and refreshing bitterness appear and rise. Snapping and lingering, the bitterness is dry and refreshing. Warm it up and you'll get even more flavor and umami from the freshly cooked rice! It's solidly good any way you drink it! It is a wonderful sake.
