This dish was given to me at a hotel in Nagano, Japan. It is a dry wine that can be used for a wide range of buffet style dinner menus.
It was served in an all-you-can-drink wine glass, and we had about 4 glasses. I drank too much.
My favorite Tokubetsu Junmai, a little dry and easy to drink, with sweetness and umami coming gradually.
The moderate alcohol content exiting through the nose is also a plus.

This is a limited pure rice brand from the Shinano-nishiki brewery.
The sake rice is Miyamanishiki produced in Ina.
Aromatic flavor and a clean, crisp taste.
#Nihon-shu
It has the flavor of rice, but with a strong acidity and a tightened feeling.
There is little aroma spreading in the mouth, and the impression is of dry rice flavor with a bit of fullness.
The mouthfeel is refreshing and dry.
It does not disturb the meal and is delicious alternately with other dishes.
It goes well with sweet date rolls, herring roe, and vinegared mackerel.
The New Year's menu is a typical New Year's choice.
