It's not so much mellow as it is refreshing.
But it's not lacking, it's just right.

A sake brewed by Miyajima Sake Brewery, which brews Shinonokishiki, with sharpness in mind.
It is sharp as it is called "Isagiyoshi".
The acidity is strong, the bitterness is small, and it is clean and crisp.
It is not enough to drink by itself, but it is perfect to accompany a meal.
It goes perfectly with boiled taro.
It is a moment to be glad to be Japanese.
Junmaishu is a junmaishu with a matured flavor.
It has a more mature taste than the same brand, Mujirushi, but the rice polishing ratio is 80% here, so it is a bit heavy.
Mujirushi has a better balance, which I prefer.
Of course, we enjoyed this one as a heated sake as well.
I love all the sake from this brewery because they all have an aged flavor.
This one has the right amount of acidity to give it that aged feel, and it's great as a heated sake. For me, it's best lukewarm.
The price is about 2100 yen for a bottle, so it's the best value.
Unfortunately, I can't find it anywhere near my house. I think I'll buy a lot next time I'm in the Nagano area.

80% Polished Miyamanishiki, 1 year sleep of Yamahai
The acidity stands out like Yamahai, but it is not persistent.
It is dry, but when the temperature rises, you can feel the sweetness like a dried persimmon.
It's light for a Yamahai, so it's good to drink in summer, and it's interesting to let it sit longer.
It has a lot of umami, so it goes well with Japanese food.
Tonight, I'll have it with grilled seaweed...

The rice is full of flavor. The taste is good too. But at the end, I felt a fruity aroma coming through my nose.
No sourness is felt.
The label says that it is cut and clean. But I felt that the aftertaste left a little fluffy in my mouth.
This Zankuro's name has an impact.
The power of the character "Zan" is amazing.
The aroma that rises is a faint apricot-like scent and alcohol.
When you put it in your mouth, you can taste the sweetness and the umami of the rice that seems to coat the fresh acidity that is typical of nama-shu.
It does not feel fizzy.
The taste of the rice is quite soft but firm.
And the bitterness comes out.
In the second half, you feel the spiciness and it slashes through.
At first, it has a little nuance like apricot wine or Shaoxing wine.
But overall, it is a good sake with a strong taste of rice.
It is not just the sharpness that makes it a mellow dry sake.
I thought that the bitterness and spiciness of the latter half would make you feel unbalanced from the soft impression of the umami taste in the beginning, but
But it is not such a thing at all, and is harmonized well.
It is delicious.
