Kuromatsu Normal Sake
It is well-balanced, with no alcohol taste, and despite being light and dry, it has a nice umami taste, and a bit of cream cheese-like creaminess. The quality of the sake is revealed when it is heated up to 50 degrees Celsius.
◉Hiyaoroshi Ginjo
Today's recommendation. It is a ginjo of Koshitanrei. The aroma is nice, but the best part is that the texture on the palate is mellow and elegant, with a smooth entry and the thickness of the rice coming out in a flash. It is very refined.
I was really impressed with the way he described the taste and the way he conveyed it.
The knowledgeable explanations of the Omachi Jundai from Niigata Prefecture and the Shinnosuke Jungin, not to mention the taste, were very fulfilling, as he talked about the brewery and sake rice.

This is one of the breweries we look forward to drinking at the Sake-no-jin every year. When drinking the supernatant, it smells a little bright and has a firm taste with a sweetness that is typical of Koshitanrei. It also has a nice sharpness. When mixed with ori, the mellowness increases dramatically. It has a stable taste and is highly recommended.
