Kuromatsu, Echino Hakugan, Normal Sake.
Purchased at Abeno Harukas.
Since we used the sake from the Nonbei Yokocho Sensei, we decided to heat up other sake as well, so here it is.
I also drank it at room temperature.
The color is clear and almost colorless.
At room temperature, there is not much of an upfront aroma, but rather a hint of alcohol. The mouthfeel is sharply dry with citrus acidity, a slight yogurt taste, and bitterness. It has an orthodox, light, dry taste.
Try it hot or lukewarm, then gradually cool it down.
The top aroma is of freshly cooked rice and alcohol.
It has a pungent spiciness that stimulates the tongue from the start. The citrusy acidity and aroma is followed by an alcoholic sensation that seems to spread quickly but just barely does not. It has a tangy, crisp, light and dry taste.
When warmed to lukewarm to human body temperature, it has a light dryness that transitions from sourness without much sweetness. The crispness becomes mild, and there is a slight astringent taste.
Might like it at room temperature.
Heating up is interesting and deep, but I'll leave it at this point.
Ingredients: rice (from Niigata), rice malt (from Niigata), brewers' alcohol
Rice polishing ratio: 60
Alcohol content: 15%.
