This yeast is more to my liking 😋.
Low in acidity, this yeast tends to produce a mellow flavor and gorgeous aroma ❣️
The aroma is a clear, fruity, melon🍈 type ginjo aroma 😁.
The gentle mouthfeel is followed by a gradual rise of Omachi-like umami and acidity 👍.
Of course there is sweetness, but it is a clear and smooth sweetness ❣️ like a Japanese pear!
The lingering aftertaste is long, with an orange 🍊 type of bitterness.
Overall, it's a calm sake that is typical of Tokujun 😋.
Like Kaze no Mori, it has the wild complexity of Omachi, but this one is balanced and delicious 💕.
It's like a mellow, juicy, one-rank higher Omachi mid-priced junmai sake 🎶.
As the day goes on, the flavor gets better and better 😍💕

Drinking the left side of the photo, it seems to be one of the sweetest I've ever had and looks like it would be good for a quick drink on its own.
I had a lot of drinks on the 14th and eventually got too drunk.
I don't remember most of them, but they were all good drinks 🍶.
