There is a discreet fruity pear-like taste with no cloying taste, and the alcohol and bitterness are not assertive. There is no aftertaste. The smell is very good, and you have a sense of anticipation, so when you drink it, you may wonder what it is. It is good and refreshing! The bitterness appears when served with food. Easy to drink on its own. When the temperature rises, it smells like hot spring buns.

Ginjo aroma is a mixture of apple and pineapple, but not to a spectacular degree. Aroma of sweetness, acidity, and gradual umami. The aroma is not too thick, with a light sweetness and acidity that gives way to the main umami bitterness, but the nose is smooth and dry at the end. A little rough on the tongue. The umami bitterness lingers for a long time. I like it better on the second day.

Visit Hakutsuru Sake Brewery Museum Sake "Mizore-shu" with a fee-based tasting (¥450) When they poured the sake from the bottle into a bowl that was cooled down to a crisp, it froze like frozen! It's a wonder 😆. It tasted just like sake itself! It was too hot outside, so we ate it like ice cream!

I bought this sake in 2024 and couldn't remember until I opened the fridge today. The bottle looks very beautiful and has the texture of jadeware. The flavor of the sake is very distinct and still relatively rich after a year.
