The first touch is light, but when you put it in your mouth, the aroma spreads at once. I was surprised every time I drank it. It was a wonderful sake.

I chose this one because I wanted to drink a beautiful food wine 🍶.
There is almost no top notes, or a gentle melon-like aroma.
The overtone aroma is a calm fruity aroma of banana and melon 🍈.
I had an image of Isshaku Suisei making beautiful sakes, and this one lived up to that expectation with a clean and clear finish, with the umami of Omachi on top of that and a not-too-intrusive acidity that kept it in perfect balance.
Drink cold.
The aroma is pineapple-like.
The taste is sour with a hint of sweetness and a strong umami, with a strong bitterness at the end of the drink.
Sake with a good balance.

The sweetness of the first half of the bottle is very charming, and its youthfulness, freshness, and dynamism spread to the palate, while in the latter half, the complexity of the five tastes of sweet, spicy, acidic, bitter, and astringent overlap.
