The third in the Hatsuyuki-so series is GRAPE.
White grape juice is added in the preparation of sake, and the fermentation of sake and wine is done at the same time.
The aroma of fresh, fruity grapes is the attack, but the taste is mildly sweet and has a refreshing acidity.
It is a good combination of the flavor of Japanese sake and the lightness of white wine.
Anyway, it is clean and clear in every respect.
Refreshing white grape juice
The aroma is really white grapes.
The taste is also full of slightly sour grapes. It's mainly sour, but not too sweet. The astringent aftertaste that makes the mouth sizzle is also like a grape.
That's as it should be. This sake is not "Japanese sake" by definition. It is made of rice, grape juice and rice malt, according to the ingredients. The rice and grape juice were put together in a tank and fermented at the same time, which is an unusual way of making sake. It's quite a challenge. I love this kind of attitude.
So it has a strong grape flavor. It's more like a white wine than a Japanese sake. It's moderately sweet and dry, and has an alcoholic flavor for a 12 degree Celsius.
According to the information on the liquor store's website, the Sake meter value is +11, acidity is 2.9, and amino acidity is 0.7. Spicy, sour, and refreshing. That's quite an extreme number.
If I were to use a Ghibli analogy, it would be Shio Tsukishima from "Earshot". She is the older sister of the main character Shizuku. The story is written in Shizuku's point of view, so it may seem harsh, but she is a strong and beautiful sister who does the housework in place of her mother who is attending graduate school. She has also appeared in "Kourou" before.
