I recently had a chance to get into aged sake. I bought a bottle of Mine no Yuki 17BY. When I warmed it up in the chirori, it was delicious. It has a chocolatey flavor and goes well with cheese and salami. It's great in winter when it's hot.

Sorry for the liqueur. I bought it because it is a rare peach flavor. It was not my type. I think it doesn't go well with something that claims to be rice wine. But the bitterness works well, so I think I can get away with it. I'm just wondering if it might be improved in a few years.

Mine-no-snow's typical acidity, umami and bitterness are restrained. But there is a broadening in the latter half of the bottle. A little expensive for the time and effort put into it...
