As usual, I've started counting the new sake I've encountered and I'm now down to 2,000 varieties, with only 2 more to go 😊. I'm about to open the sake I bought for the new year 🤗🥰 I'm a sake-drinking old man having a party by myself😅. The first Shiboritate of the season, the best part of sake that can only be tasted in the brewery. Taste the genuine junmai sake. It has a subtle ginjo aroma, and despite the aroma, it is dry and heavy like a honjozo (pure sake). It is a mellow dry version of Yuki Kohmei that does not interfere with food. It goes well with saikyoyaki, sukiyaki, eel, etc.

The third glass was a brand I had never heard of before, Echigo Yukikoumbai. This was the first shibori-shibori of the same brand. It tasted like the light and dry Niigata sake that I imagined most, but with a strong sense of originality in the rice flavor. 🙆‍♂️ I have never been to Niigata, but I would love to go sightseeing in the city full of beautiful sake and food someday 😌.
