We had a sake that was also served at the G7 and is not available in the market. It is really easy to drink, with no quirks and no off-flavors. Yet it has a mellow, full-bodied flavor and a good aroma. I think it is a sake that everyone can enjoy. I am glad to have encountered it... 96 points.
This Sake has a mellow mouth feel and a smooth sweetness. A well balanced acidity gives this a clean finish. The flavor of sweet apple matches the intensity of the smoothness to make this very enjoyable. Beautiful.
Today's sake is Imanishiki from Yonezawa Shuzo in Nakagawa Village, Nagano Prefecture: ❗️ and also Junmai Unfiltered Raw Raw Sake made with 100% Miyamanishiki from Nakagawa Village: ❗️❗️
The aroma is fresh and raw. The first sip reveals a slight astringency on the tongue, but it soon disappears. Afterwards, the sweet ginjo taste of slightly hardened ester with the mildness of the original sake remains. ❗️ Interesting sake. ❗️❗️

Imanishiki, pressed in a sake tank, was given to me by a business partner some time ago. Thanks. It is made from 100% Miyamanishiki from Nagano Prefecture, with a rice polishing ratio of 55% and an alcohol content of 16%. It is refreshing and delicious. In the evening, we re-steamed half-priced Kabako crab from Uozu and served it with Uchiko.
Tonight we had #Imanishiki Special Junmai Nakagawa Village Tamago Namaishu from #Yonezawa Shuzo in Kamiina-gun, Nagano Prefecture.
I think it is my favorite in the #Imanishiki tadpole series 😊It has a sweet umami, moderate acidity, and a nice sharpness.
It went well with meat and fried food for dinner tonight.
