This brewery is located in Nakagawa Village, Nagano Prefecture.
Miyamanishiki rice produced in Nakagawa Village is polished to 59%.
Gentle and elegant aroma, full-bodied rice flavor, mellow and juicy flavor.
The aroma is gentle and elegant, the taste of rice is full and juicy, and the aftertaste is clean and crisp,

The aroma is fruity, sweet and bitter, and the bitterness is a little strong, but it is delicious. It is a bit tangy. In conclusion, this is my favorite.
Ima-Nishiki Junmai-Ginjo Kinmon-Nishiki
The sweetness is not so strong, and the bitterness is strong like Kinmonnishiki.

This sake was recommended to me at a restaurant I entered after being rejected by many of the stores I was looking for. Mildly sweet on the palate, with a firm finish on the nose, as is typical of nama sake. It has a short aftertaste with a clean finish. It is typical of Shinshu. I don't know what it is, but it seems to be a sake that has grown legs from a tadpole.

The only place I know of that carries it is Hinodeya Sake Shop in Incheon, but they carry both Kinmame and Mizuo 🤔.
I think the toji of Raku no Se used to be at Imanishiki, right? They brew totally different sake!
