Thanks for a great week 🍶Today is my first time in Hokkaido. I will have Niseko.
This is the first sake I have ever had. It is made from Hokkaido's sake rice, Comet. It is also the first time to drink with Comet rice. I am excited.
The aroma is fruity and sweet like apples. On the palate, it has a refreshing sweetness and umami at first. It is the kind of sake you would expect to find in Nagano sake.
After a little time, the umami flavor stands out and disappears with a touch of rice and spiciness. I was surprised to see such a change in taste.
I'm pairing it with grilled fish and a Yanagawa nabe made with canned mackerel and it's delicious 😊✨.

The nose has a good ginjo aroma with a slight alcohol smell. The initial attack is clean and sweet, followed by a bitter taste and a long aftertaste. It is a delicious sake made with Hokkaido's comet.

This was also my first time to visit the brewery.
I was a little anxious, so I chose a four-pack bottle.
The bottle was opened with a high pitched "ponk" and poured into a sake cup. The aroma is not very noticeable and the color is almost transparent. My guess is that it is a classic.
It is still a classic. But for a 16% alcohol content, it comes in and disappears quickly and easily.
When you put it in your mouth, it gives the impression of water, but in the middle, there is a bitterness from the pungency. The bitter taste is followed by a slight sourness at the end. It is a light sake, but still gives a strong sake taste.
