It was autumn and the sake was not hiyaoroshi but nama-zake! I bought it. It has a crisp, soft taste with a hint of acidity that is not too assertive.
It is a beautiful sake that is easy to drink.
This is last year's zero. The flavor is on it, and it goes great with the persimmon and pork shabu salad with kombu dressing (yum).
This year's will be available in the next week or so.
It has been ice-aged in a store for about 3 years.
The aroma is soft and subdued, reminiscent of ripe bananas, pears, and apricots.
There is a slight chili flavor.
Complex yet clean sweetness and umami derived from the nama-moto (sake brewing process). It is a delicious sake with a milky, soft richness and a smooth, refreshing taste.
I'm curious about the Japanese pear label! I thought I bought it, but upon closer inspection, it was just orange? LOL!
However, it has a strong acidity like Japanese pear, and I think it is probably made according to the concept. It also has a slightly lactic acid-like nuance.
Well, even though sake with acidity is popular, this type of acidity is a bit unique. It's not bad, but it might be a little tiring.

It is refreshing and can be drunk both warmed and chilled.
