I finally made it there!
First time at Sake Labo.
I was curious about this place after someone recommended it in a comment on Sake-no-wa. (I forgot who it was 🙇♂️ but I haven't forgotten the name of the restaurant 💦)
Since we stopped by in the time before our drinking session, we drank a little more than half a cup for 440 yen instead of the all-you-can-drink that they probably sell. I think it's cheap because you can drink everything up to junmai ginjo and junmai daiginjo class for this price.
It was hot, so I asked for a more gaseous sake, and this is what I got.
It was the first time for me to drink this sake, but they were generous enough to open a bottle of this one, which was not on the menu.

I bought this sake because I was curious about it after seeing an update on Instagram from a liquor store I frequent.
As for the taste, it is a relatively young sake. I first felt its freshness. I drank it with simmered dishes, but the chemistry wasn't great.
I wonder what this goes with, it is delicious!

This year again, I bought Machida Brewery's ? I bought a bottle.
The specs are a secret except for the unfiltered, raw, junmai.
When I poured it into a glass, I could see fine bubbles that seemed to have gas in them, which excited me.
When you put it in your mouth, you can still feel a strong sense of gas. The sweetness is less pronounced than expected, with a strong umami flavor. When you finish it, you will be left with an astringent aftertaste.
We enjoyed it again this year.

The pear 🍐-like aroma, slight fizziness, sweet and fruity attack, and pleasant bitterness in the aftertaste, the Machida Brewery's characteristics are still intact.
It has a gorgeous taste, and I don't have the palate to comment on the differences from the Machida Brewery in my memory😅.
If I were to pair it with a meal, I think it would be better with something well seasoned, like fried food or sweet and spicy simmered dishes 😊.

I had a very good thing happen today, so I opened a bottle of Machida Shuzo's ? (Triple Hatena), which was a personal hit last year.
Last year, it was an unbeatable 1,100 yen (including tax) for a four-pack, but this year the price is 1,320 yen (including tax), which is a slight increase...
This year, the price is slightly higher at 1,320 yen (tax included), but the rice polishing ratio and even the rice used in the bottle are undisclosed.
