The aroma is not so strong, and the taste is clean, with a predominance of bitterness and acidity, making it a good match for sweet boiled dishes.
I opened the bottle late at night on Wednesday when I was exhausted from work. I bought a bottle of Shigemasu Dry Junmai Ginjo-Ichibi in Hakata.
I wonder if this is the last summer sake of the year.
It has a deep umami flavor with a crisp, clean finish that reminds me of that hot summer.
Rice: Gin-no-sato, Yume-ichikkyo
Yeast: No. 9 yeast

It is refreshing and the rice flavor is relatively strong, but the sake body is not florid or rich. It is fragrant when drunk, but the flavor quickly disappears.
The aroma is mild.
Fresh, fruity flavor,
Beautiful rice flavor! Rice graininess.
It also has a smooth acidity.
Light and easy to drink.
Goes well with sashimi.
Taste level 3.5/5
This sake was a gift and the name comes from Hakata Ipponjime, a unique hand-tightening technique in Hakata. It seems to mean "Hakata's own unique bottle.
It tastes dry without much sweetness and has a clear melon flavor with little acidity. It is creamy with a little bit of rice flavor. The bitterness seems weak. Although it is in the direction of the middle of the classic with little acidity and no sweetness, I don't dislike it because it is refreshing and I don't get tired of drinking it.
Even when warmed up, it has a strong core of flavor and is delicious.
